Fishing and Fabric

Last night we went out to my mom's place, because today was the annual ice fishing derby. The last few years I fished, but decided not to this time because we never catch anything. I am pretty glad I didn't sign up, because it was FREEZING! It was a nice sunny day, but the wind was blowing pretty hard and it was very cold! Eric went out with a few friends for most of the day. I took my brother to go fish for a while, and he lasted about 10 minutes, and so did I! However, we are still glad we went because we like going out to visit my family, and we got to spend time with family and friends.

Also while at my mom, I cut up some beautiful fabric! I dropped my sewing machine off for a cleaning and maintenance at the local fabric shop in Gimli, and while I was there I fell in love with this fabric:

So the next day a co-worker and I went back to the shop because she had 30% off all the fabrics and to enter some draws, and so I bought all of these to make a quilt with:

I just think it is so pretty. I don't know even what I am going to do with this quilt, but I just had to get this fabric! I will probably give it as a baby gift!

Radio

The other day I was at work alone and I wanted some music. For some reason my iPod didn't fit into our dock at work, so I looked for a Christian radio station. I wanted to avoid the cheese and the old christian pop, and so I found http://www.christianrock.net/ ! It was exactly what I was looking for, and there are 4 different stations to choose from depending on your tastes!

TurboFire


I bought these DVD a while back, but I have only done them it 3 times! Partly because of motivation, but also because they would not work in my DVD played.

Well, I finally got a new DVD player and started TurboFire yesterday! And I managed to motivate myself to do it today too! It is tough, but I really like it. I am really hoping I can stick with it this time. Especially for the last couple weeks of the Biggest Loser challenge.

On a different note, I just realized that I forgot about Turkey Tuesday two weeks in a row! OOPS!! I will try to start it next week!!

Bye, Bye Little Truck & Festival De Voyager

Yesterday we went into the city to sell our truck. It needed a lot of repairs that we couldn't afford, so we decided it would be best for use to sell it for cheap and put that money towards getting my mom's old car running. We only need a second vehicle for Eric to get to work and to town if he needs to. It was actually a major answer to prayer that it sold. A belt had broken that day, and I had given up all hope on selling it. I had decided that we might as well just fix it because nobody would want a truck that needed all those repairs (it needs a transmission, power steering pump, and lots of other small things). That night we had a reply to our Kijiji ad, and then it was sold! All we had to do was drive it in. Here it is all loaded up and ready to go:

Then we headed to Festival De Voyager. I have never been but I have always wanted to go. It was $13 each to get in and we got there at 5:30. It wasn't until 6:30 that we realized that it closed at 7! All the other nights it is open late, so we just assumed it would open that late yesterday too. Oh well, I still got a taste, literally! These maple taffy (tire sur la neige) were my favorite!

Cedarwood

I would like to say a big thank you to all who prayed for us this past weekend. Our youth retreat at Cedarwood was amazing. So amazing I didn't want to
leave, and I would really love to go back. God definitely showed up this weekend. He moved in my life, and I know that He moved in the lives of the youth as well. I am just so full of thankfulness for the weekend as a whole. We stayed safe, our speaker and worship band were awesome, we had lots of fun, Cedarwood felt like home and the food was delicious.

We also snowmobiled and pulled a sled behind that, went cross country skiing, had a nighttime fireside, watched a movie, did karaoke, had a hay ride, played foosball, air hockey, floor hockey, and ping pong. The only disappointment was they we didn't get to use the hot tubs. Anyways, I hope we can book that place again soon!

Fat Paris

Eric has been calling her the Hindenburg lately, because he thinks she looks like a blimp! Just a little over two weeks to go before there are new babies in this house!!!

And this is what happens after a Paris and Remy eat a meal. I am mixing their food right now so there is two kinds. They pick up a mouthful and drop it on the floor, then pick out the new kibbles and leave the old! Then I am left with this mess to clean up. But I have a confession. I will not clean it up.I will leave it there until they eat it. Because the bowl will get empty eventually, then they will have to eat the food off the floor!!

Youth Retreat

Well, today I am snowed in at home. Normally I would be excited about it, but we had a busy day with lots of surgeries and I was really looking forward to it. Plus I always feel terrible not going into work. Lately I would really like to live closer. Like close enough I could just walk to work. I could get so much more sleep! And save on gas. But then Eric would have to drive, or get a different job, so it won't happen.

Anyways, our youth group is going on a youth retreat this weekend. I am pretty excited about it. Pretty much our entire youth group is going, which is awesome. We rented a camp with lots of fun indoor and outdoor activites, the meals are made for you, we are getting a guest speaker in, and a guest worship band. If you think of us this weekend, please pray for us. Pray that God will move in the lives of the kids, and in the leaders too. Pray that we will be safe driving there and back, and during the weekend.

My Evening


This is what my evening was filled with! Baking tonnes of Banana Chocolate Chip Muffins for my sister in laws bake sale tomorrow! They are very yummy, so I thought I would share the recipe too! I didn't add the walnuts, though. And for some of them I topped with some extra chocolate chips! I think I made around 120 of them!!

Directions:

Prep Time: 20 mins

Total Time: 50 mins

  1. puree bananas in blender or mini-food processor; measure 1 cup for recipe. Beat bananas, sugar, eggs butter and vanilla in medium bowl.
  2. Combine flour, baking powder, cinnamon and salt in large bowl. Stir in chocolate chips and nuts.
  3. Make a well in the center of dry ingredients. Add banana mixture. Stir until blended. Spoon into greased 2 1/2 inch muffin pans (or right into muffin liners).
  4. Bake 350°F for 25 to 30 minutes, or until toothpick inserted in centers come out clean.

Cake Testing!

This evening I got the chance to go to a cake testing with my cousin Mallory. It was really cool experience! The High Tea Bakery, the place I got my wedding cake from, was putting it on along with a decorating company at country club just outside winnipeg.

It was set up really nicely. Every table had a different set up, table cloth and centerpiece. There were nine different kinds of cake to try. My favorites were the cinnamon buttercream, the strawberry buttercream, and the chocolate chifffon cake. I also really enjoyed the banana cake.

We were only there for half an hour, but it was really good and I am glad we went.

I am staying at my cousins tonight, because she lives closer to my work. It is not even 10 yet, and I am about to go to sleep! I am excited about the amount of sleep I am going to get tonight!

A Valentine's Surprise!

This year I didn't really push Valentine's day plans on Eric. He had an appointment today in Gimli, so we just decided to go for supper today instead of yesterday for Valentine's day. Yesterday we went to his parents for supper and then played a game with them and it was a great time!

Today Eric came to Gimli for his eye appointment and then went to go help his dad unload wood at some dudes place. Then his dad dropped him off at the clinic, or so I thought.

We went for supper at brennevins and then went to pharmasave to get some stuff. When we pulled out of the pharmacy parking lot, Eric turned the wrong way and I beaked him for wanting to cruise around downtown Gimli.

It wasn't until he parked in front of Koma Heim that I realized something was going on. I asked him what was happening and he said he had a surprise for me. At first I thought we were going to Koma Heim, but then he took me inside the Lakeview hotel, which is in the same building. At that point I still wasn't really sure what was going on, I was thinking maybe an activity or something. Finally when we got in the elevator it started to click.

We went up to the second floor and Eric showed me to our room! That is when I saw a suitcase and realized what was going on! He booked us a room for the night! I was totally speachless! He completely surprised me!

We have a big suite, with two rooms, one with a king sized bed and one with a couch and table and fridge stuff! we went swimming and hung out in the hot tub already, and now we are watching a movie that we can rent for free from the hotel.

Eric made sure all the animals were taken care of at home too! The best part of staying in gimli for night is that I get to sleep in a whole extra hour and I don't have to drive in the morning! It is so nice to have a stress free evening!

I feel so blessed and loved. God has given me an amazing husband and I am so thankful!

7 Things You Might Not Know About Lindsey (Or maybe you do!)

1. I like to keep busy all the time, I can't sit still for long periods of time or else I get bored. I don't like watching TV or movies without something for my hands to do, so I usually knit!
2. The island of Santorini in Greece is my favorite place I have ever been. I would love to own a B & B there one day.
3. I love puppies. I would adopt 30 of them if it didn't end up like this. Because it would. It is amazing what 4 little Chihuahua puppies can wreck., never mind 30!
4. I love making stuff, like knitting, sewing or baking, but somehow it never turns out like I want it to and I am always dissapointed, even if other people love it. I guess I am a perfectionist!
5. I love airplane food. Not so much the snacks, but when you are on a longer flight and you get meals! I think they taste so good, and I love the packaging and how everything is organized.
6. I would love to adopt from the Ukraine, whether I get pregnant or not!
7. I sometimes go through phases where I eat peanut butter straight. Usually for breakfast, but occasionally at other times too. I haven't done that for a while though!

The Worst

Maybe this will embarrass me even more to post, but oh well.

Today a client at work asked if I was "expecting", right in front of two co-workers. I obviously told her no, but I always think of better things to say after the fact!

I really don't understand why she asked me that. I mean, I know I have a belly and maybe some people could mistake that for a bump. BUT, this woman has seen me at the clinic for years, and I have lost weight in that time period! I could understand if I had once been skinny and now I am not, but I am smaller than I used to be! This lady is a talker though, so of all people, it doesn't surprise me that she would ask.

I wish everyone would abide by the general rule to never ask a woman if she is pregnant. Even if you think she is 9 months along.

I wish in the moment I could reply with something like this "Yes, I am expecting to have a baby one day, but as of right now my husband and I have been trying for over 3 years to get pregnant and we are still waiting for that miracle. And, yes, I am expecting to loose weight so I can get rid of this belly so people like you don't embarrass me anymore. But, I do have PCOS which makes it really easy to gain weight in the belly, and really difficult to loose it. Thanks for asking."

But I always get so flustered and I have to fight back tears, so I never get the chance for a clever response.
Maybe I should just get this shirt in several different colors and wear it everyday....

1. If you have pets, do you see them as merely animals or are they members of your family?
Right now I have 8 animals. Three Chihuahuas, two Irish Setters, a cat and two horses. They are a part of my family, especially the dogs!

2. If you could have a dream come true, what would it be?
To have lots of babies and live on a farm!

3. What would you do with a billion dollars?
Pay off everyone in my family's debt, give a bunch to BCBC so they can do whatever projects they want and make camp even more awesome, build our dream house, travel lots, build an youth drop-in center in Riverton, sponsor lots of kids and missionaries, invest it and try not to let it change who I am!

4. What helps to pull you out of a bad mood?
Eric making me laugh, friends, my dogs, praying and reading my Bible.

5. What is your bedtime routine, with your kids?
Well, I don't have kids, but...Let the dogs out to use the washroom, take out contacts, floss, brush teeth, mouthwash, wash/tone/moisturize face, then I usually read my Bible and pray.

6. If you are currently in a relationship, how did you meet your significant other?
I don't really remember officially meeting Eric, I just always kind of knew about him from friends and seeing him around town at different events. When I was a teenager I had a HUGE crush on him, but never would have imagined that he would actually want to date me, of all people! I pretty much married my dream man. He started coming to our school in Grade 10 and we started dating the following spring, on March 31st, 2001!

7. What kind of books do you read?

I don't read a lot of books, but if I do they are usually about dogs, a devotional or sometimes I will get sucked into a series like the Harry Potter books or Twilight. My husband is the reader in our family! He devours books of all kinds.


8. How do you see yourself in 10 years?
Living on a farm with a bunch of kids running around, running my own business from home, serving God in our church and community in whatever way He wants me to!

9. What’s your fear?
That I won't have my own children, I guess. But I know that God is in control and I trust Him with my future. Perfect love drives out all fear.

10. Would you give up all junk food for the rest of your life for the opportunity to see outer space?
No! I don't really have a desire to see outer space, but I should probably give up junk food for the rest of my life anyways!

11. What’s the first thing you do when you wake up?
Press snooze several times. I really need to get out of that habit!

12. If you could change one thing about your significant other, what would it be?

That he wouldn't mind my dogs inside. Not that I am complaining, because he is usually really great about my animals!

13. If you could pick a new name for yourself, what would it be?
I used to want a different name, but now I like mine! I used to want to be called Erin because I just LOVED that name!

14. If you had to choose between six months of sun or six months of rain, what would you choose?

Sun for sure! As long as there was some A/C somewhere!

15. If you could only eat one thing for the next 6 months, what would it be?
Hamburger soup! I just can't get enough of that stuff!

16. What is the thing you enjoy about blogging the most?
Letting my feelings out, being able to look back and see what I was like a few years ago, and connecting with people I don't see everyday/have never met!

17. Do you prefer salty or sweet foods?

Sweet for sure!

18. What items are in your purse right now?
Wallet, checkbook, pens, hand lotion, pills, reciepts, iPod charger, lip balm, and probably some other random things


19. If you had to choose between vacationing at the beach or in the mountains where would you go?
Mountains for sure! I love the beach but it would probably be boring after a while, and you can hike in the mountains and I love hiking!

20. What do you watch on television that you know you shouldn’t?

I don't watch a lot of TV, but probably Grey's Anatomy or Criminal Minds, too much garbage and horror stories in them!

Turkey Tuesday


Yesterday I had a brilliant idea. Turkey Tuesday. Ok, so I know I didn't come up with that name. But because we are hoping to become turkey farmers someday soon, I might as well promote it.

SO, every Tuesday I am going to post a delicious recipe with turkey in it! Turkey is a very healthy choice! It is a fantastic source of lean protein and contains many vitamins and minerals.

Floor Hockey



This evening the boys let me play floor hockey with them. It was really fun, and it was great exercise! It is a great chance to practice my stick handling and eye/hand coordination!

I am quickly discovering that I love hocking in all forms! I even love watching it now! I can appreciate it more now that I have played it, and I realize just how much skill you need to be that good!

Chatty's Puppies

Chatty is a co-workers dog. She is a show dog, and her breeder wanted her to have one more litter before my co-worker could keep her for good. We ultrasounded her the other day just to make sure everyone was doing alright. We got this great video! You can see four puppies, not all of them as clear as the others. They are about 6 weeks along. Only 2-3 more weeks to go! You can see them wiggling around! So cute! I love babies.

Women's EM Cup Tournament

Today I played my first four games of hockey ever! Alyssa convinced me to play in the Women's EM Cup Tournament in St. Agathe, and I am glad I did. I had such a blast. And we totally hit the jackpot with the team we got put on, they were all great players!

I was definitely the worst player on the team, but the girls were very encouraging and never made me feel bad about it. I scored a goal in the second game! It was seriously the best feeling ever, so exhilarating!

We lost our first game, but won our second two and made it to the gold metal game! In the gold metal game, Alyssa got a shut out, so we won gold! I never expected to win the whole tournament! I know I wasn't much help, I just got really lucky with the team I got put on!

I really enjoy playing hockey. I can't believe I didn't start this earlier, I really wish I had. I love getting out in town and hanging out with the ladies there. I love the exercise! I really want to practice lots and learn to skate backwards better so I can actually be useful in a game!

I Love Babies!!

Well, I haven't had success in getting pregnant yet, but my dog has! Paris is pregnant and due around March 3rd. We ultrasounded her last week, and saw three puppies for sure, probably four. It was a little early to ultrasound so they were very small!

It feels like forever since I have had puppies running around this house. I can't wait. I am going to savor every moment of them because this will be Paris' last litter.

Decision

I guess a few of you are waiting to see what we decided for fertility treatments. The choice was pretty obvious, as we don't have 10 grand. I have always felt God leading me to an IUI, so I will be having the surgery on April 12th.

In the meantime, we will be praying for a natural miracle. It was unclear whether he wanted me to do more rounds of Clomid, so right now we will not be doing anything before the surgery.

I am really not stressing about this. I know God is in control, and when the time is right we will have a baby. When I really think about it, I worry and stress, so I just try to put it out of my mind.

Orlandio Recap - Epcot/Monday

Originally, we didn't plan on going to Epcot, but I am glad we did. We got up at 8:30 to finish packing up. We checked out, stored our bags and grabbed breakfast at the resort.

Much to my surprise, all of Epcot is NOT inside the ball. I honestly thought the entire park was inside that giant white golf ball. It wasn't until a I saw a map a couple days before we went to the park that I realized that it was like a regular park, outside. In fact, there is NOTHING inside that ball. Eric was shocked that I thought that, but I have always thought that, and it is still hard to believe! Haha!

At Epcot we started with the rides. We went on the Space mission on, the test track, and a tour of their green houses where we saw some really innovative ways to grow food! I would love to try some of them!

We got a Fast Pass for the Soarin' ride, but it was 3 hours away, so we started checking out the country pavilions. They are all really well done. I loved the shops that had items from the countries. It wasn't the generic Disney stuff.

We had a delicious lunch in Morocco, one of the best meals we had I think!

This is in Japan. You could pick out a clam, and this lady would dig out the pearl and they would put it on a necklace for you. She made it a big production making us clap and cheer and stuff. It was pretty cool!

This is the only picture of the two of us that is not a self portrait! A nice lady offered to take this picture when she saw Eric taking a picture of me!Our fast pass for Soarin' was for 3. We thought we could quickly go on the ride before we caught our bus, but at 3:15 we were still in line with no end in sight, so we had to leave. Our shuttle back to the hotel was booked for 3:55. We just barely made it back to the hotel before our shuttle left.

We had a bit of a wait before our flight, because we got to the airport early. Our flight was uneventful, and it was suprisingly warm when we got back! I was really expecting it to be colder. Thankfully, our car started with no issues and we got home at 1:30.

It was a great trip. I am so thankful that I had the opportunity to go to Disney World, and I am looking forward to taking my children there one day!

Orlando Recap - Animal Kingdom/Sunday






We got to Animal Kingdom at around 9:30. It was a fairly short bus ride because our resort was just outside of the Animal Kingdom enterance. I really enjoyed this park. It was like a really awesome Zoo! I especially loved the Asia and Africa sections, they really made it feel like you were there with all the decor and music and stuff.

The park was only open until 5, but we had plenty of time to see everything we wanted to. It is a smaller park, and there was not a lot of waiting in lines. My favorite part was seeing this baby giraffe on the safari ride, for sure!

In the evening we went to Downtown Disney for one last time. We spend some time browsing and shopping. We went to an Irish restaurant pub for supper. Eric got fish and chip and I got a really yummy raspberry salad. For an appetiser, they served a sweet bread with reduced Guiness beer with sugar and olive oil. It was so delish, but Eric and I didn't know what it was until after we were done eating it and asked our server! We would never have guessed that. They had live music pretty much the whole time too! After that we headed back to our resort and packed up our bags as much as we could and tried to get to bed earlier.
